ok i'll be frank.
local restaurants die.
they very rarely survive, despite having good food, good community, good prices, they just die.
it is hard as hell to keep a restaurant going. |

you're tapping into a market that doesn't exist
you aren't getting rich from a local restaurant unless you work downtown in a metropolis.
you might do alright, enough to pay the bills, but you aren't getting rich. |

so you aren't getting rich from a gluten free restaurant in a town of 20k. i live in a city of about 100k and local restaurants die everyday. (even popular ones.) |
