I mean when you're building, what's that sweet spot that'll let you know when a brick is connected to a hinge? Does it have to touch the yellow part, or should it go all the way up to the brick?

That little yellow part is the actual hinge. The hinged parts will revolve around the center of that spot, so yes the parts need to touch the yellow bit.

For best results the two parts should be touching before placing hinges. If the parts dont touch, then use NoGrid and move them closer with collisions on. Always place the hinge on the moving part. A hinge works like it should unless you use a vehicleseat to control them.
