Security you say?
You can go check out Linux, which itself is a popular server platform, there are tons of security tools along with server software like Apache which are quite secure. You can also get SELinux for a more secure kernel.
Precaution:
Do package upgrades once in a while they roll out for any security patches. I think Ubuntu might be good as it has a live patching system available, so you can apply security patches without rebooting. It's also a good idea to have a container/VM to test out upgrades.
