if someone has their phone locked but they get a notification for a liked post on ########## will they be able to see which photo you liked when they open it even if you unlike it?

I don't believe so. I have seen notifaction's on friend's phones when someone likes their ######### post. We will use the name Nathan for example "Nathan has liked your ######### post" or something It never specifies what picture it is if the phone is locked.
