Microsoft Expression Encoder. The free version only gets 10 minutes, but you can easily put the videos together.

Hypercam 3 gives compression and quality problems. I use Fraps and Hypercam 2. Hypercam 2 is a more realiable version then the new one, in my oppinion.

Bandicam. It's cheap, lightweight, relatively small video sizes for HD content, and the only downside to the free edition is a fairly small watermark over your content which can be removed with a bit of video editing knowledge.

Get the full version of FRAPS. You can use it to record the whole screen by checking a box at the startpage, too. (@xSixx)

CamStudio if you have a TON of space and fast hard drive on your computer or you want to modify it easily, or FRAPS if you have a fast CPU, and don't have that much space on your computer.

I've used BB Flashback in the past and used a program called MediaCoder to make the file sizes smaller (but unfortunately, on my specific machine, I can't play them back).
