Can't get my head around DataStore.

Ok, so I could use DataPersistance easily, but DataStore is just too confusing for me. Would anyone be able to explain it to me please? (Yes, I can script.) I was going to create a Healing Potion developer product, where it returns the Player's health to 100%. I am currently scripting the Gui to PromptPurchase the products. How would I go about saving them? I are not going to script them to be able to be instantly used. Thank you, Dr.
