2. If you boot into a Mac, then you can download OS X from there |

Their crappy firmware allows only EFI boot mode, atleast a few OSes like Windows, Ubuntu etc work well with them.
You can't replace their graphics card or processor, really?

Except they don't lock you into EFI boot. I've installed Arch Linux several times on my MacBook Pro and completely modified the Bootloader |
