well if the people that made the coaster don't know how to use brakes, that means the coaster must be really cheap and wimpy, considering they don't know how to launch or use lift hills lmao

The ride would keep going. Momentum and gravity guide and direct the ride, so you would just simply keep on screaming on the ride. No big deal. However, if part of the roller coaster rail had been ripped off by some mutant beaver with a strange appetite, and if you had no brakes, time to evacuate immediately.
