My favorite scale is the Byzantine/double harmonic scale. It is a bit tricky to write in, but it sounds exotic, Middle Eastern, and if used correctly, heavy.

for metal, whenever i try to write metal riffs (which is VERY rarely), i use phrygian or locrian. mostly d phrygian and d locrian because drop d tuning is so metallic
