Everyone will say the 2005 one
Personally I enjoyed the 2012 one a whole lot more.

2012 was a lot better
i get why everyone liked 2005 but i liked the simplicity of 2012
you find a car in the city parked, you're allowed to drive it
you gotta be able to beat the top 10 best racers in the city to be the "most wanted" |

I didn't like 2012 due to the lack of customization
also I preferred working my way up to buy better cars, not just going to a parking lot and getting in a different car |

Pretty much what rose said, plus you could ram people off the road and get a take down. Instantly makes it one of the best NFS games ever made.

The customisation was cancer for me in carbon, all the body kits looked like they were made for edgy kids who skip school and think that they are cool; also I can't help but think that the slightest bump on the road and the cars body kit will just rip straight off and destroy the whole god damn car.
All I ever did in Carbon was paint my car black, and add a purple neon light and purple tint on my windscreens; I never liked any of the decals cause in my opinion they all looked bad and made the cars look outright stupid. I like the decals on Forza horizon 2 because it still keeps it as a normal car and you could literally have ken blocks dirt paint on your ford focus.
Also working up the car system is a cool design, but NFS 2012 was just so much more fun because I didn't have to start off with the stupid Porsche I got; instead I just found the nearest Lamborghini and raced enough to unlock all of its upgrades. Then when I was done with the gallardo I found other cars I love like the Ariel atom and the Nissan GTR

If you don't like the bodykits then you can use autosculpt to make bumpers
if you keep the sliders low then you won't make extreme looking parts |

MW2005 is obviously the best.
