Colour correction is a term used for when a game worlds colours are changed. For example, in LA NOIRE, you can actually play the game either in colour or in black and white via an option in the games menu. Thats an example of colour correction.
What I'm suggesting is that we can have similar tech in our games. Of course, Colour correction is a very resource-needing thing, so it can be toggled on or off at any time.
What this means is that you could create a game set in the 1940's, colour it in normal colours, then create a colour correction to make the world black and white, so some players see colours while the others see black and white.

Yes colour correction is quite difficult for example look at the piece of work magic bullet looks it took a long time to make. |

You can now make black and white, add a "ColorCorrection" into lighting, and make the "Saturation" property -1.
